Fructose/Gluten Free Breakfast Cereal

This yummy breakfast cereal is a delicious, healthy way to start the day - perfect with milk, plain yoghurt or even on its own as a crunchy snack. This recipe makes about 10 serves.

1/4 cup carob powder
3 cups puffed millet
1 cup puffed rice
1 cup bran
handful of dry roasted almonds
1/2 cup roasted buckwheat
1/4 cup psyllium husk
1/4 cup LSA mix (optional)
1/4 cup chia seeds
1/4 cup pumpkin seeds or sunflower seeds
1 teaspoon cinnamon
1 cup of rice malt syrup

  1. Pre heat oven to 180
  2. Mix all dry ingredients together in large bowl
  3. Pour rice malt syrup into sml saucepan and stir over low heat for 1-2 minutes until watery consistency
  4. Pour into dry ingredients & mix syrup through until thoroughly combined
  5. Line an oven tray with foil or baking paper
  6. Spread a thin layer of mixture over tray and bake for 5 minutes
  7. Let cool & break up into small pieces 
  8. Repeat baking until all mixture is toasted
  9. Store in air tight container for maximum freshness
